Coconut- Raspberry Ice Cream
This is probably the easiest recipe that you have ever made.
It has only two ingredients that you’ll be able to find at any supermarket or even corner store. And it requires one piece of equipment.
I feel like a bit of a fraud even calling it a recipe
But it’s the most delicious ‘treat’ on a summer afternoon. I put treat in quotes because there is absolutely nothing bad about it, so don’t feel guilty. It’s also a great desert for when you have friends over.
2 c frozen raspberries (they need to be frozen, as they provide the ‘ice’ part
1 c coconut cream
Place the can of coconut cream in the fridge for at least two hours so that the cream separates from the water.
Once it’s chilled scoop just the cream off the top and place into a blender or bullet.
Add the two cups of frozen raspberries and blend until smooth
Taste and if to tart, add more coconut cream
Serve immediately with a garnish or grating of 85% cocoa chocolate to top.
