Devilled Sausages

This is a delicious comforting meal for a cold winter’s evening. I like to cook this in the oven, but you can also use your slow cooker – just put all of the ingredients in the slow cooker and cook on low for 8 hours or until cooked.

Ingredients:

6-8 good-quality gluten free sausages (at least 90% meat)
2 tbsp avocado or coconut oil
2 large onions, halved and thinly sliced
500ml beef stock
2 tbsp Worcestershire sauce
2 tbsp tomato purée
2 tbsp sugar-free fruity chutney or pickle
2 tbsp Dijon mustard
¼ tsp cayenne pepper,
2 tsp dried thyme
Salt and black pepper

Method:

Preheat the oven to 200°C (390°F). Place the sausages in the oven and leave to cook whilst you prepare the sauce.
Heat the oil in a deep pan, then cook the onions over a medium heat until they start to brown. Stir in the remaining ingredients, then simmer gently over a low heat for 15 minutes.
Remove the sausages from the oven and add them to the sauce. Simmer for a further 10 minutes.
Serve with potato or cauliflower mash (depending on your carb intake).
